Glitteringly pale lotus yellow in colour, look for subtle aromatic finesse: a lively citrus profile of grapefruit, lemon pith and white floral blossom tinged with pear and mandarine. A backbone of steely Prince Edward County minerality highlighted by flavours of orchard stone fruit. An ideal aperitif wine.

Fattier seafood like salmon and higher acidity foods like tomatoes

Simple shellfish – marinated mussels, roasted red peppers or linguine with clams

White meats – pork and fennel sausages with apple relish, Veal Prosciutto, poached Dijon chicken

Cheese – goat, fresh un-ripened ricotta, fontina or mozzarella
