TASTING NOTES

COOL and CLASSY

Straw yellow in colour. In its adolescent state, aromas of barrel spice, baked apple/pear, honey and toasted almonds. The palate unveils a mouthful of creamy elegance highlighted by dry-edged vanillascented orchard fruit. Grown on limestone, one senses the pure terroir- driven nature and all encompassing minerality in a cool climate setting. A wine you’d be happy to brush lips with at a party.

Notre chardonnay, d’une couleur jaune paille, développe des arômes de pommes et de poires cuites, de miel et d’amandes grillées avec des notes épicées. Des saveurs élégantes de fruits du verger, de bâton de vanille, florales et minerales à la fois. A consommer maintenant ou a garder quelques années pour plus de complexité.

  • Sugar – 1.3g/L
  • Alcohol – 13%
  • Brix – 21.8
  • Aging – 2300L was aged 15 months in French oak of which 30% was new barrels blended with 1000L left in tank
  • Production – 370 cases

  • Crab & leek risotto
  • Seared scallops with charred potato salad and lemon oil
  • Mushroom & goat cheese ravioli
  • Crisp skin salmon with tarragon brown butter
  • Cheese – Brie, Swiss, Jack

Recommended Enjoyment

A great compliment to any meal. Showcase this wine while hosting a fancy dinner party and as it flows, so will the conversation. Just don’t open while cooking, otherwise it might not make it to the table…the wine nor the host.

This shows the very well integrated, clean lines of a classic County chardonnay, with fine acidity, alcohol and fruit integration. It is light on its feet and elegant. However, the oak is sitting a bit heavy for now with spice, light toast and cedar mingling with a touch of butter and apple. There is real Burgundian sensuality however, and excellent length, so I am betting the barrel will integrate very well by 2021, and this will be held up as a County classic. Tasted July 2019

Light straw in clour with a spicy, gently oaky apple bouquet. Medium-bodied, dry apple and lemon flavours. Harmonious with judicious use of oak. Reminiscent of a Macon-Lugny. Lovely mouthfeel with a fresh finish
