  • Tasting Notes

Our 2016 vintage, a Blanc de Blancs, fashioned in the Methode Tradionnelle manner, is enlivened with aromas of ripe bruised apple spritzed with grapefruit and white floral nuances. The electric buzz of acidity is punctuated by flavours of stone fruit (white peach, nectarine, dried apricot . All in all: an upbeat swish of bubbles. BRUT-ifull stuff !

Asian – tempura, Chinese deep fry, fish cakes, Indian samosas and poppadums

Raw fish – sushi, sashimi, oysters

Coarsely textured food – pesto, hummus, babaghanoush

Toasty characters – toasted canapés, puff pastries

Cheese – Parmagiano Reggiano, triple creams, salty fetas and goat
