This wine is produced in the Mistelle method
using unfermented chardonnay juice from our
South Bay vineyard blended with distilled apple
brandy from Field Bird Cidery which is just 1
km down the road. The blend was then aged in
French oak for 19 months resulting in a complex
sweet sipper perfect for capping off the night.
A discreet shade of Naples yellow, direct your
senses to up-front baked apple tart and
mandarin/marmalade aromas with suggestions of
orange and white floral blossom. On the palate,
fresh and candied apple slowly transcends to
apricot/apple/pear/fig compote finishing with a
riff of honeyed richness.
