We introduce you to our inaugural fortified wine product! This wine is produced in the Mistelle method using unfermented chardonnay juice from our South Bay vineyard blended with distilled apple brandy from Field Bird Cidery which is just 1 km down the road. The blend was then aged in French oak for 12 months resulting.
A discreet shade of Naples yellow, direct your senses to up-front baked apple essence with suggestions of orange and white floral blossom with a wisp of vanilla. On the palate, fresh and candied apple slowly transcends to apricot/ apple/ pear/fig compote in the wake of sultana raisin and a riff of honeyed richness.
